Ingredients
  

For the Casserole

  • ½ cup finely chopped caramelized onions Caramelize before using
  • 8 oz fire-roasted diced green chiles Canned or fresh
  • 4 cups hand-shredded cooked chicken Use leftover chicken or rotisserie chicken for convenience
  • 10 ½ oz cream of chicken soup Standard can size
  • ½ cup sour cream
  • ¼ cup whole milk
  • 1 cup sharp cheddar cheese, grated For layering and topping
  • ½ tsp roasted garlic powder
  • ½ tsp ground cumin Can be adjusted for spice preference
  • ½ tsp smoked paprika

Optional Garnish

  • to taste freshly chopped cilantro For adding freshness

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a skillet, heat butter or olive oil over medium heat. Add the finely chopped onions and cook until they are caramelized, about 10 to 15 minutes.
  • In a large bowl, mix together the hand-shredded chicken, fire-roasted green chiles, cream of chicken soup, sour cream, whole milk, roasted garlic powder, ground cumin, and smoked paprika until well combined.

Assembly

  • Layer half of the chicken mixture in the greased baking dish, ensuring it covers the bottom evenly.
  • Sprinkle half of the grated sharp cheddar cheese over this layer.
  • Add the remaining chicken mixture on top, followed by the rest of the cheddar cheese.

Baking

  • Cover the baking dish with aluminum foil and bake for about 25 minutes.
  • Remove the foil and bake for an additional 10 to 15 minutes until the cheese is golden and bubbly.
  • Let it rest for a few minutes before serving, garnishing with cilantro if desired.

Notes
