  • 12 large large eggs
  • 1 cup whole milk or 2% milk
  • 4 ounces canned diced green chiles, drained
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Pepper Jack)
  • 1/2 cup finely diced onion (yellow or white)

Dry Ingredients

  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional) Optional ingredient for added flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with cooking spray or butter.
  • In a skillet, sauté the finely diced onions over medium heat for about five minutes until translucent.
  • In a large mixing bowl, whisk together the eggs and milk until frothy.
  • In a separate bowl, mix the flour, baking powder, salt, and black pepper before adding it to the egg mixture.
  • Fold in the sautéed onions, green chiles, and shredded cheese.

Baking

  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Bake for about 30 to 35 minutes, until golden brown and the center is set.
  • Allow to cool for a few minutes before slicing for serving.

Notes
