  • 2 lbs chicken breasts Use high-quality breasts for juiciness.
  • 1 cup salsa verde This adds a tangy flavor.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Adjust for more heat if desired.
  • Salt and pepper to taste

For Serving

  • Tortillas Use warm tortillas for serving.

Preparation

  • Prepare your slow cooker.
  • Place the chicken breasts at the bottom of the slow cooker.
  • Pour salsa verde over the chicken.
  • Add chopped onion and minced garlic.
  • Sprinkle cumin, chili powder, salt, and pepper over the top.

Cooking

  • Cover the slow cooker and set to cook on low for 6-8 hours or high for 3-4 hours.
  • After cooking, shred the chicken in the slow cooker using two forks.

Serving

  • Serve the shredded chicken in warm tortillas or over rice.
  • Top with cheese, cilantro, or avocado if desired.

Notes

For a thicker sauce, stir in sour cream or cream cheese after shredding. Leftovers taste even better the next day.
