Instructions
In a large mixing bowl, whisk together olive oil, lemon juice, salt, black pepper, oregano, paprika, and garlic powder to create the marinade.
Add the shrimp to the bowl and toss to coat evenly. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
Soak wooden skewers in water for 30 minutes to prevent burning. Thread 4-6 shrimp onto each skewer.
Preheat your grill or grill pan over medium-high heat.
Place the skewers on the grill and cook for 2-3 minutes on each side until the shrimp are pink and opaque.
Remove from the grill and let rest for a moment before serving.
Garnish with chopped parsley and serve with lemon slices.
