  • 2 medium zucchinis, sliced These will be grilled to add a smoky flavor.
  • 1 cup cooked rice or quinoa Use as the base of the bowl.

For Seasoning and Sauce

  • 1 tablespoon olive oil For tossing the zucchini.
  • to taste Salt and pepper For seasoning the steak and zucchini.
  • 1/2 cup Greek yogurt Used to make the herb sauce.
  • 1 tablespoon fresh lemon juice Adds a bright flavor to the sauce.
  • 1 tablespoon chopped fresh herbs (such as parsley or dill) Use any fresh herbs you prefer.
  • 1 teaspoon garlic powder For flavor in the herb sauce.
  • 1 teaspoon smoked paprika Adds smokiness to the steak.

Instructions
 

Preparation

  • Start by preheating your grill or grill pan over medium-high heat.
  • Generously season your steak with salt, pepper, and smoked paprika.
  • While the steak rests, toss the sliced zucchinis with olive oil, salt, and pepper.
  • In a small mixing bowl, combine Greek yogurt, fresh lemon juice, chopped herbs, and garlic powder.

Cooking

  • Place the seasoned steak on the grill. Cook for about 4-5 minutes on each side, depending on thickness and desired doneness.
  • Once done, remove the steak from the grill and let it rest for a few minutes.
  • Grill the zucchinis for about 2-3 minutes on each side until charred and tender.

Assembly

  • Start by adding a layer of cooked rice or quinoa to your serving bowl.
  • Slice the rested steak and place it over the grains.
  • Arrange the charred zucchini alongside the steak and drizzle the herb sauce over the top.
  • Serve warm and enjoy!
