Ingredients

  • 1 lb ground beef 80/20 works best for flavor and moisture
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • to taste salt
  • to taste pepper
  • 1/2 cup tomato sauce
  • 1/2 cup beef broth optional for juicier texture
  • 6-8 large flour tortillas
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1 cup cooked rice optional
  • 1 cup canned black beans drained and rinsed
  • as needed sour cream
  • as needed guacamole
  • as needed chopped lettuce
  • as needed salsa

Instructions

  • Heat a skillet over medium heat. Add onion and garlic, sauté until fragrant and soft. Add the ground beef and cook until browned. Drain excess fat.
  • Stir in cumin, smoked paprika, chili powder, oregano, salt, and pepper. Add tomato sauce and beef broth (if using). Let simmer for 5-10 minutes.
  • While the beef mixture simmers, warm the tortillas. You can heat them in a dry skillet or microwave them wrapped in a damp towel.
  • To assemble the burritos, lay each tortilla flat. Add a layer of rice, black beans, a generous spoonful of beef mixture, and cheese. Top with sour cream, guacamole, and other desired toppings.
  • Fold in the sides of the tortilla and roll tightly. If you prefer a crispy burrito, toast them seam-side down in a hot skillet for 1-2 minutes per side.

Notes

Feel free to adjust the toppings to your liking. Try adding jalapeños for extra spice or corn for added sweetness!
