Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the chopped onion and bell pepper to the skillet and sauté for 3 to 5 minutes until softened.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Push the sautéed vegetables to the side of the skillet and add the ground beef. Cook for 6 to 8 minutes until browned.
  • Stir in the diced potatoes, season with salt and pepper, and cook while occasionally stirring for 10 to 15 minutes until tender.
  • Taste and adjust seasoning if necessary, then remove from heat.

Serving

  • Plate the hash and top with optional toppings: green onions, cheese, or hot sauce.
