Ingredients

For the Stroganoff

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 8 ounces egg noodles
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Preparation

  • Start by cooking the egg noodles according to the package instructions. Once done, drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
  • Add minced garlic and sliced mushrooms to the skillet. Cook for another 5 minutes, stirring occasionally, until the mushrooms soften and release their moisture.
  • Push the vegetables to one side of the skillet and add the ground beef. Cook until browned and fully cooked, breaking it up with a spatula as it cooks.
  • Sprinkle flour over the beef and stir to combine, cooking for about 1 minute to eliminate the raw flour taste.
  • Pour in the beef broth and add Worcestershire sauce and Dijon mustard. Stir well to combine and bring the mixture to a simmer.
  • Allow it to simmer for 3-4 minutes until the sauce thickens slightly.
  • Reduce the heat to low and stir in the sour cream, mixing until thoroughly incorporated. Season with salt and pepper to taste.
  • Add the cooked egg noodles to the skillet, tossing to coat them evenly in the sauce.
  • Serve immediately, garnished with fresh parsley.

Notes

For a thicker sauce, you can add a little more flour or let it simmer for longer. For lighter options, consider using ground turkey or chicken instead of beef.
