  • 1 lb ground turkey
  • 2 pieces bell peppers, diced any color
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste salt and pepper

Instructions
 

Preparation

  • Heat a large skillet over medium heat and add a dash of oil to coat the bottom.
  • Once the oil is shimmering, add the pound of ground turkey and cook until golden brown, breaking it into smaller pieces. This should take about 5 to 7 minutes.
  • Add the diced onion and minced garlic to the skillet, and sauté for about 3 to 4 minutes until the onion is translucent.
  • Stir in the diced bell peppers and cook for an additional 4 to 5 minutes until they are tender.
  • Sprinkle in the chili powder, cumin, salt, and pepper, and mix everything thoroughly to coat the turkey and vegetables evenly. Adjust the seasoning if necessary.

Serving

  • Serve the ground turkey and peppers over cooked rice, in lettuce wraps, or tucked inside taco shells. Add toppings like diced tomatoes, avocado, or cheese if desired.

Notes

For freshness, use the best quality vegetables you can find. You can substitute bell peppers with zucchini, mushrooms, or spinach if desired. Leftovers are great for lunch the next day in salads or wraps.
