Ingredients
  

Pasta

  • 12 oz medium shell pasta (or pasta of choice)

Meat

  • 1 lb ground turkey Choose lean ground turkey for a healthier option.

Vegetables

  • 2 Tbsp olive oil Divided into two tablespoons for cooking.
  • 2 cloves garlic, minced
  • 1/2 large red bell pepper, diced small
  • 4 oz white mushrooms, thinly sliced or diced small
  • 1/2 large white onion, diced

Seasonings and Sauces

  • 1 tsp salt Taste and add more as desired.
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning
  • 2 Tbsp all-purpose flour Use to thicken the sauce.
  • 2 cups beef broth (or chicken broth)
  • 1 15 oz can tomato sauce
  • 1 cup heavy cream Can be substituted with light alternatives.
  • 1/2 cup Parmesan cheese, freshly grated Adjust to taste.

Garnish

  • Fresh basil Optional for garnish.

Instructions
 

Preparation

  • Begin by boiling a pot of water with a pinch of salt and cook the pasta according to the package instructions, about 8 to 10 minutes. Drain and set aside.
  • In a Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the ground turkey, season with salt and pepper, and cook until browned. Drain excess fat and set aside.
  • Add the remaining tablespoon of oil to the pot. Sauté garlic, red bell pepper, mushrooms, and onion for about 5 minutes until tender. Season with salt, pepper, and Italian seasoning.

Cooking

  • Whisk in the all-purpose flour with the sautéed vegetables to thicken the sauce.
  • Pour in beef broth and tomato sauce, stirring to combine, and let simmer.
  • Add cooked ground turkey back to the pot and mix.
  • Stir in pasta, cream, and Parmesan cheese. Taste and adjust seasoning.
  • Allow the mixture to simmer until the sauce thickens slightly.
  • Garnish with fresh basil and additional Parmesan before serving.

Notes
