  • 1 medium onion diced
  • 2 garlic cloves minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 1 zucchini diced
  • 4 cups chicken broth low-sodium for a lighter soup
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach or kale, for a hearty twist

Instructions
 

  • Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes, stirring occasionally, until the vegetables soften and the onion becomes translucent.
  • Cook the ground turkey: Add the ground turkey to the pot and break it up with a spoon. Cook for about 6-8 minutes, or until the turkey is browned and fully cooked through. Make sure to stir occasionally to ensure it cooks evenly.
  • Add the broth and seasonings: Once the turkey is cooked, add the chicken broth, diced tomatoes, thyme, oregano, salt, and black pepper to the pot. Stir everything together and bring the soup to a gentle simmer. Let it cook for about 10-15 minutes, allowing the flavors to combine and the soup to thicken slightly.
  • Add the zucchini and spinach: Toss in the diced zucchini and fresh spinach (or kale if you prefer). Stir well and cook for another 3-5 minutes, just until the vegetables are tender and the spinach wilts.
  • Taste and adjust seasoning: Give the soup a taste and adjust the seasoning as needed. You can add a little more salt, pepper, or herbs depending on your preference.
  • Serve and enjoy: Ladle the soup into bowls, and you’re ready to enjoy a warm, nutritious meal!
