Main ingredients

  • 4 medium medium sweet potatoes Choose firm and smooth sweet potatoes.
  • 1 pound ground turkey Use lean turkey to minimize excess fat.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 1 cup corn (fresh or frozen)
  • 1 cup black beans, drained and rinsed
  • ½ cup shredded cheese (cheddar or your choice) Try using a mixture of cheeses for varied flavor.
  • 1 tablespoon olive oil
  • lime wedges for serving Enhances the flavors.
  • fresh cilantro for garnish Adds color and flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly and pierce them with a fork several times. Place them on a baking sheet and bake for about 45-60 minutes, or until soft and easily pierced with a fork.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are tender, about 5-7 minutes.
  • Add the minced garlic, smoked paprika, cumin, chili powder, salt, and pepper. Stir and cook for another minute to release the spices’ aromas.
  • Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 8-10 minutes, making sure there are no pink spots remaining.
  • Stir in the corn and black beans, mixing all the ingredients well. Allow the mixture to cook on low heat for 5 minutes, ensuring everything is heated through.
  • Once the sweet potatoes are done baking, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out a little bit of the insides to create space for the filling.
  • Fill each sweet potato half generously with the ground turkey mixture and top with shredded cheese.
  • Return the stuffed potatoes to the oven for about 10 minutes, or until the cheese has melted and is slightly bubbly.
  • Remove from the oven and garnish with fresh cilantro. Serve with lime wedges on the side for a zesty kick.
