Ingredients
  

  • 1 box spaghetti
  • to taste salt
  • 1 lb smoked turkey
  • 6 pieces smoked herring fish
  • 1/2 cup olive oil
  • 6 sprigs thyme
  • 1/2 cup water
  • 5 Tbsp tomato paste
  • 2.5 Tbsp epis (Haitian seasoning)

Instructions
 

  • In a large pot over medium heat, heat 1/2 cup of olive oil. Add the epis and tomato paste, frying for about 5 minutes until deep in color.
  • Add chopped onion, tomatoes, thyme, bell pepper, cloves, and the scotch bonnet pepper. Include a pinch of salt and 1/2 cup of water.
  • Incorporate the smoked turkey, cover the pot, and lower the heat. Let it simmer for about 20 minutes.
  • Meanwhile, cook the spaghetti according to the package instructions (usually 8-10 minutes).
  • Add the cooked spaghetti to the sauce, ensuring it is well coated. If desired, you can add more tomato paste and epis to the sauce.
  • Cook everything together for another 15 minutes, then serve hot.
