Instructions
In a large pot over medium heat, heat 1/2 cup of olive oil. Add the epis and tomato paste, frying for about 5 minutes until deep in color.
Add chopped onion, tomatoes, thyme, bell pepper, cloves, and the scotch bonnet pepper. Include a pinch of salt and 1/2 cup of water.
Incorporate the smoked turkey, cover the pot, and lower the heat. Let it simmer for about 20 minutes.
Meanwhile, cook the spaghetti according to the package instructions (usually 8-10 minutes).
Add the cooked spaghetti to the sauce, ensuring it is well coated. If desired, you can add more tomato paste and epis to the sauce.
Cook everything together for another 15 minutes, then serve hot.
