Halloween Oreo Cheesecake

Ingredients
  

  • 1 block cream cheese room temperature
  • 1 large egg room temperature
  • 1/3 can sweetened condensed milk
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp vanilla extract
  • 1/3 cup mini chocolate chips
  • Halloween Oreo Cookies for the crust and topping
  • chocolate topping for drizzling

Instructions
 

  • In a large mixing bowl, combine cream cheese and sweetened condensed milk. Mix until smooth.
  • Add sugar, lemon juice, and vanilla extract. Mix until fully combined.
  • Incorporate the egg, mixing on low speed until just combined.
  • Fold in mini chocolate chips gently.
  • Prepare the crust by placing crushed Halloween Oreo cookies in the bottom of ramekins or a baking pan.
  • Pour the cheesecake mixture over the crust, filling the ramekins or pan.
  • Bake at 285°F (140°C) for 20-30 minutes, until set but still slightly wobbly in the center.
  • Let cool in the oven with the door ajar for 30 minutes. Then refrigerate for several hours or overnight.
  • Before serving, top with crushed Halloween Oreos and drizzle with chocolate topping.
