Ingredients
  

  • 1/2 cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 3 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp milk room temperature
  • 2 tbsp Halloween sprinkle blend
  • 1/2 cup unsalted butter for frosting, room temperature
  • 2 oz. cream cheese room temperature
  • 1 3/4 cups powdered sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tsp heavy cream
  • 3-4 drops gel food coloring
  • 1/4 cup Halloween sprinkle blend for topping

Instructions
 

  • Preheat the oven to 350°F (175°C) and prepare an 8x8 baking pan with nonstick spray and parchment paper.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the egg, vanilla extract, and milk, mixing until combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until a soft dough forms.
  • Fold in the Halloween sprinkles.
  • Spread the dough evenly into the prepared baking pan.
  • Bake for 25 minutes or until lightly golden. Allow to cool in the pan.
  • For the frosting, beat together the butter and cream cheese until smooth. Gradually add powdered sugar, salt, vanilla, and heavy cream, mixing until fluffy.
  • Add gel food coloring to achieve desired color and mix well.
  • Spread the frosting over the cooled cookie bars and top with additional Halloween sprinkles.
  • Cut into squares and serve.
