Ingredients
  

Main Ingredients

  • 1 lb beef stew meat Choose cuts like chuck roast or shank for best results.
  • 3 ribs celery, minced
  • 1 medium yellow onion, diced
  • 2 large carrots, minced
  • 4 cloves garlic, minced
  • 3 oz tomato paste
  • 1 lb potatoes, roughly chopped
  • 28 oz can of whole peeled tomatoes, drained and rinsed
  • 2 cups water Add more if necessary to cover ingredients.
  • Salt and pepper to taste

Instructions
 

Preparation and Searing

  • Heat a large pot over medium-high heat and add the beef stew meat, searing it until golden brown on all sides.
  • Remove the seared beef from the pot and set aside.

Cooking the Vegetables

  • In the same pot, add the minced carrots, celery, diced onion, and garlic. Sauté until softened, about 5 to 7 minutes. Season with salt and pepper.
  • Stir in the tomato paste and cook for 30 seconds to deepen the flavor.

Combining Ingredients

  • Return the seared beef to the pot. Add the chopped potatoes and rinsed tomatoes, mixing well.
  • Pour in 2 cups of water, or just enough to cover the ingredients completely.

Simmering

  • Bring the mixture to a boil, then reduce to a gentle simmer. Cover the pot and let it simmer for 1 hour or until the beef is tender.
  • Taste and adjust the seasoning with additional salt or pepper as needed.

Serving

  • Ladle the stew into bowls. Serve with rice or crusty bread and garnish with fresh herbs like green onions or cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. To reheat, thaw overnight and warm on low heat.
