Main Ingredients

  • 4 medium medium-sized potatoes Choose Yukon Gold or red potatoes for the best texture.
  • 200 grams feta cheese Use high-quality feta for best flavor.
  • 2 tablespoons olive oil For drizzling over potatoes.
  • 1 teaspoon dried oregano Can substitute with other herbs.
  • 1 teaspoon garlic powder Adjust according to taste.
  • Salt to taste salt Use as needed for seasoning.
  • Pepper to taste pepper Use as needed for seasoning.
  • 1 cup cherry tomatoes Halved for stuffing.
  • 1 medium red bell pepper Chopped for stuffing.
  • Fresh basil leaves For garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking dish.
  • Wash and scrub the potatoes thoroughly. Pat them dry with a kitchen towel.
  • Pierce each potato several times with a fork.
  • Arrange the potatoes in the baking dish. Drizzle olive oil over them and season with salt, pepper, and garlic powder.

Baking Potatoes

  • Bake in the preheated oven for about 45-60 minutes or until the potatoes are tender when pierced with a fork.

Preparing Vegetables

  • While the potatoes bake, prepare the vegetables. In a separate bowl, toss cherry tomatoes and chopped bell pepper with oregano, salt, and pepper.

Stuffing Potatoes

  • After the potatoes are done, remove them from the oven and let them cool slightly.
  • Cut a slit in the top of each potato and gently squeeze the ends to open them up.
  • Stuff each potato with the tomato and bell pepper mixture and place feta cheese on top.

Final Baking

  • Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the feta cheese is golden and slightly melted.
  • Remove from the oven, garnish with fresh basil, and serve warm.
