Ingredients
  

  • 4 pieces ripe bananas about 1 1/3 cups mashed (320 g)
  • 1 large egg
  • 1 Tbsp. vanilla extract (15 ml)
  • 3 Tbsp. light brown sugar (38 g)
  • 2 Tbsp. granulated sugar (25 g)
  • 1 tsp. ground cinnamon (2.6 g)
  • 1 tsp. baking powder (4 g)
  • 1 tsp. baking soda (5 g)
  • 1/2 tsp. salt (2.5 g)
  • 1 1/2 cups all-purpose flour (180 g), can be white or white-whole wheat
  • 2 Tbsp. unsalted butter melted (28 g) or substitute with applesauce (30 g)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, mash the ripe bananas until smooth.
  • Mix in the egg, vanilla extract, brown sugar, granulated sugar, and ground cinnamon until well combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Fold in the melted butter or applesauce until fully incorporated.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 5-10 minutes before transferring it to a wire rack to cool completely.
