  • 3 pieces ripe bananas, mashed Ensure they are very ripe for maximum sweetness.
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup Natural sweeteners instead of refined sugar.
  • 2 large eggs Can be substituted with flaxseed meal or applesauce for egg-free.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups whole wheat flour Can substitute with gluten-free flour if desired.
  • 1/2 cup chopped nuts (walnuts, pecans, or almonds) Optional add-in.
  • 1/2 teaspoon ground cinnamon Optional for added flavor.
  • 1/2 cup dark chocolate chips Optional for a sweeter touch.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Stir in the melted coconut oil until well combined.
  • Add the honey or maple syrup, eggs, and vanilla extract, mixing until uniform.
  • Sprinkle the baking soda and salt over the mixture and stir gently to incorporate.
  • Gradually add the whole wheat flour and mix until just combined to avoid over-mixing.
  • Fold in chopped nuts, ground cinnamon, and dark chocolate chips if using.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for about 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
