  • 3 ripe bananas
  • 1 1/2 cups whole wheat flour
  • 1/4 cup honey or stevia for a lower-sugar option
  • 1/4 cup olive oil or butter for a richer flavor
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon optional
  • 1/4 cup Greek yogurt

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a loaf pan with a little oil or line it with parchment paper for easy removal.
  • Mash the bananas: In a large bowl, mash your ripe bananas with a fork or potato masher until smooth. The riper your bananas, the sweeter and more flavorful your bread will be!
  • Mix the wet ingredients: Add the eggs, honey (or stevia), olive oil (or butter), and vanilla extract to the mashed bananas. Stir until well combined.
  • Add the dry ingredients: In a separate bowl, whisk together the whole wheat flour, baking soda, salt, and cinnamon (if using). Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing to keep the bread light and fluffy.
  • Add Greek yogurt: Stir in the Greek yogurt for extra moisture and protein. This will keep your bread soft and tender.
  • Pour into the pan: Pour the batter into your prepared loaf pan, spreading it evenly with a spatula.
  • Bake: Place the pan in the preheated oven and bake for about 55-60 minutes. Check for doneness by inserting a toothpick into the center—if it comes out clean, your bread is ready!
  • Cool and enjoy: Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. This allows it to set properly and makes slicing easier.
