Pudding Base

  • 2 pieces ripe bananas Should be yellow with a few brown spots.
  • 2 cups Greek yogurt Use plain or flavored based on preference.
  • 1/4 cup honey or maple syrup Sweeten to taste.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 1 teaspoon cinnamon Optional, for added flavor.
  • a pinch salt Balances sweetness.

Toppings

  • 1/2 cup granola or crushed nuts For added crunch.
  • as needed fresh banana slices For garnish.

Instructions
 

Preparation

  • Peel the ripe bananas and place them in a mixing bowl.
  • Mash the bananas with a fork until smooth, leaving a few small chunks if desired.
  • Add the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt to the mashed bananas.
  • Mix thoroughly until a creamy consistency forms.
  • If you like, sprinkle in the cinnamon and mix again.
  • Taste the mixture and adjust sweetness by adding more honey or maple syrup if necessary.
  • Spoon the pudding into serving dishes or glass containers.
  • Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.

Serving

  • Top the pudding with granola or crushed nuts and fresh banana slices before serving.

Notes

For variation, try adding peanut butter, crushed pineapple, or cocoa powder. Best if served in clear cups to show the layers.
