  • 2 pieces Chicken Breasts, skinless and boneless Opt for leaner option
  • 2 pieces Zucchinis, sliced Slice into rounds or half-moons for even cooking
  • 2 pieces Yellow Squash, sliced Slice similarly to the zucchinis
  • 2 tablespoons Olive Oil For cooking and flavor
  • 2 cloves Garlic, minced Enhances the dish's aroma
  • to taste Salt Essential seasoning
  • to taste Pepper Essential seasoning
  • to taste Fresh Herbs (like basil or thyme) For garnishing

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, warm the olive oil over medium heat.
  • Generously season both sides of the chicken breasts with salt and pepper.

Cooking

  • Once the oil is hot, add the seasoned chicken breasts to the skillet. Cook for about 5 to 7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and let it rest on a plate.
  • In the same skillet, add minced garlic, followed by the zucchini and squash. Sauté for around 5 minutes until tender.
  • Return the chicken to the skillet, resting it atop the sautéed vegetables. Cover and lower the heat. Cook for another 10 minutes.
  • Before serving, sprinkle fresh herbs over the dish.
