Main Ingredients

  • 2 pieces boneless, skinless chicken breasts (around 1 pound)
  • 2 medium zucchinis, sliced
  • 2 medium yellow squashes, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish) For serving

Preparation

  • Slice the zucchinis and yellow squashes evenly.
  • Season chicken breasts with salt, pepper, oregano, and thyme.

Cooking

  • Heat a large skillet over medium-high heat and add the olive oil.
  • Once the oil is hot, sear chicken breasts for about 5-7 minutes on each side until golden brown and cooked through.
  • Remove chicken and let it rest on a cutting board.
  • In the same skillet, lower heat and sauté minced garlic for 30 seconds.
  • Add sliced zucchini and squash and sauté for 5-8 minutes until tender.
  • Slice the rested chicken and toss it with the sautéed vegetables.
  • Garnish with chopped parsley before serving.

Notes
