  • 1 pound ground turkey Use lean ground turkey for a healthier option.
  • 1 medium head cauliflower, chopped into florets Cauliflower serves as a creamy base.
  • 1 cup broccoli florets
  • 1 cup diced bell peppers Any color bell pepper works!
  • 1 small onion, diced Adds flavor to the dish.
  • 2 cloves garlic, minced Enhances the aroma and taste.
  • 1 cup low-sodium chicken broth Keep it low sodium for a healthier option.
  • 1 cup Greek yogurt Can be replaced with a dairy-free alternative.
  • 1 cup shredded cheese (e.g., mozzarella or cheddar) Choose your favorite cheese.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil For sautéing the vegetables.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes or until tender. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 3-4 minutes.
  • Add the ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
  • Stir in the broccoli and bell peppers, cooking for an additional 3-4 minutes until they soften slightly.
  • In a large mixing bowl, combine the cooked turkey mixture with the cauliflower, chicken broth, Greek yogurt, thyme, oregano, salt, and pepper. Mix until everything is well combined.

Baking

  • Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded cheese evenly over the top.
  • Bake the casserole in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.
