  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fat-free Greek yogurt for serving (optional)

Preparation

  • Set your Instant Pot to the sauté function. Drizzle a splash of olive oil and let it heat up.
  • Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes or until the onion is softened and translucent.
  • Place the boneless, skinless chicken breasts into the pot and stir gently to coat with onion and garlic.
  • Add the drained white beans and diced green chilies.
  • Pour in the low-sodium chicken broth and sprinkle cumin, chili powder, salt, and pepper. Stir to combine.
  • Close the lid on your Instant Pot and set it to high pressure for 10 minutes.
  • Once the cooking time is up, let the pressure release naturally for a few minutes before switching to manual pressure release.
  • Open the pot and shred the chicken using two forks in the broth.
  • Ladle the chili into bowls while hot and top with a dollop of fat-free Greek yogurt if desired.

Notes
