Ingredients
  

Main ingredients

  • 1 pound boneless, skinless chicken breast, diced
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

  • chopped green onions

  • shredded cheese
  • lime wedges

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté for about 5 minutes until softened.
  • Stir in the minced garlic, cooking for an additional minute until fragrant.
  • Add the diced chicken to the pot, cooking until no longer pink, about 5-7 minutes.

Cooking

  • Once the chicken is cooked, add the diced green chilies, white beans, chicken broth, heavy cream, Cajun seasoning, ground cumin, oregano, salt, and pepper.
  • Stir well and bring to a simmer. Lower the heat and cook for 20-25 minutes, stirring occasionally.
  • Check the thickness of the chili and add more chicken broth or water as needed to reach desired consistency.
  • Taste for seasoning and adjust salt and pepper if necessary.
  • Serve hot, adding your favorite toppings.

Notes

For a spicier kick, add jalapeños or hot sauce. Feel free to use a rotisserie chicken to save time. Letting the chili sit for 30 minutes after cooking enhances the flavor.
