  • 6 large eggs
  • 2 medium potatoes, peeled and diced
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 1 teaspoon garlic, minced
  • 1 cup spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice) Choose cheese that melts well
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • for garnish Fresh herbs (like parsley or chives)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat olive oil in an oven-safe skillet over medium heat.
  • Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they are golden and crispy.
  • Stir in the onions, bell peppers, and minced garlic. Cook for another 5-7 minutes until the vegetables are tender.
  • Reduce the heat to low, then add the chopped spinach and mix until wilted.
  • In a separate bowl, whisk together the eggs, salt, and pepper.
  • Pour the egg mixture over the cooked vegetables in the skillet. Sprinkle the cheese on top.
  • Cook on the stovetop for 2-3 minutes until the edges begin to set.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes until the center is set and the top is gently browned.
  • Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh herbs.

Notes
