Hearty Rutabaga and Carrot Casserole

Ingredients
  

Vegetables

  • 2 medium rutabagas, peeled and diced Fresh and firm for best texture.
  • 4 large carrots, peeled and sliced Crisp and vibrant.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids

  • 1 cup vegetable broth
  • 1 cup heavy cream Can be substituted with low-fat milk for a healthier option.
  • 2 tablespoons olive oil

Herbs and spices

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Toppings

  • 1 cup breadcrumbs For topping.
  • 1 cup grated cheese (cheddar or your preference) Experiment with different types of cheese.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the diced rutabagas and sliced carrots to the skillet. Season with salt, pepper, thyme, and rosemary. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  • Pour in the vegetable broth and heavy cream. Mix well and let it simmer for about 10 minutes to allow the flavors to meld.

Baking

  • Transfer the mixture into a greased baking dish.
  • Spread the breadcrumbs evenly on top of the vegetable mixture. Then sprinkle your choice of cheese over the breadcrumbs.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
  • Remove from the oven and let it cool slightly before serving.

Notes

Garnish with fresh herbs for added flavor. Pair with a green salad or crusty bread. Leftovers can be reheated, and the flavor improves over time.
