  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon Olive oil

  • Shredded cheese
  • Sour cream
  • Green onions

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for an additional minute.
  • Add chili powder and cumin, cooking for another minute to enhance flavor.

Cooking

  • Add black beans, kidney beans, and pinto beans to the pot.
  • Pour in diced tomatoes and mix well.
  • Season with salt and pepper to taste.
  • Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let simmer for 15-20 minutes.
  • Serve hot, adding optional toppings if desired.

Notes
