  • 4 cups vegetable broth Use low-sodium broth for better control over saltiness.
  • 1 cup water
  • 1 cup grated Parmesan cheese Freshly grated recommended for better melting.
  • 2 tablespoons olive oil High-quality olive oil adds more flavor.
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped Can substitute with other herbs if desired.
  • 1 tablespoon fresh parsley, chopped
  • to taste Salt and pepper Adjust seasoning before serving.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and sauté for about 5 minutes until it becomes translucent.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the chopped cabbage to the pot, stirring to combine, and cook for about 5-7 minutes, allowing it to wilt slightly.
  • Pour in the vegetable broth and water, bringing the mixture to a gentle boil.
  • Reduce the heat and let it simmer uncovered for about 15 minutes, or until the cabbage is tender.
  • Stir in the grated Parmesan cheese, chopped thyme, and parsley. Mix well until the cheese melts and incorporates into the broth.
  • Season with salt and pepper to taste, adjusting as needed.
  • Remove from heat and let it sit for a few minutes before serving.
