Instructions
Cook the penne pasta in boiling water according to package instructions until al dente. Drain and set aside.
In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes.
Add minced garlic and sauté for an additional minute.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
Mix in the diced tomatoes (with juices), beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Stir until well combined.
Let the mixture simmer on low heat for about 5 minutes to meld the flavors.
Toss the cooked penne pasta into the skillet and mix until the pasta is well coated with the sauce.
Serve hot, garnished with fresh basil or parsley.
