Ingredients
  

  • 8 oz Penne Pasta
  • 1 lb Lean Ground Beef
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 can Diced Tomatoes 15 oz can, with juices
  • 1 cup Low-Sodium Beef Broth
  • 0.5 cup Plain Greek Yogurt
  • 0.25 cup Grated Parmesan Cheese
  • 1 tablespoon Italian Seasoning

Instructions
 

  • Cook the penne pasta in boiling water according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes.
  • Add minced garlic and sauté for an additional minute.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  • Mix in the diced tomatoes (with juices), beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Stir until well combined.
  • Let the mixture simmer on low heat for about 5 minutes to meld the flavors.
  • Toss the cooked penne pasta into the skillet and mix until the pasta is well coated with the sauce.
  • Serve hot, garnished with fresh basil or parsley.
