  • 2 cups lasagna noodles, broken into pieces Traditional lasagna noodles work well.
  • 1 cup ricotta cheese Provides creaminess.
  • 1 cup shredded mozzarella cheese Adds melt-in-your-mouth texture.
  • 1 cup spinach or kale Can use either leafy green for a nutrient boost.
  • 1 tsp Italian seasoning Enhances flavor profile.
  • Salt and pepper to taste Season to individual preference.
  • 1 tbsp olive oil For sautéing the vegetables.

Preparation

  • Heat a drizzle of olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until soft and fragrant.
  • Incorporate the ground turkey or beef and cook for about 5-7 minutes until browned.

Cooking

  • Stir in the crushed tomatoes, broth, and Italian seasoning and bring to a boil.
  • Lower the heat and add the broken lasagna noodles. Let it simmer for about 8-10 minutes until the noodles are tender.
  • Stir in the ricotta cheese and spinach or kale until the greens wilt.
  • Season with salt and pepper to taste.

Serving

  • Ladle the soup into bowls and top each serving with shredded mozzarella cheese.
  • For added flavor, garnish with Italian seasoning or fresh herbs.
