Ingredients
  

For the Soup Base

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium bell pepper, diced
  • 1 medium zucchini, diced
  • 1 can diced tomatoes (15 oz)
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can cannellini beans, drained and rinsed (15 oz)
  • 1 cup lentils, rinsed
  • 6 cups vegetable or chicken broth
  • 2 teaspoons Italian seasoning
  • to taste Salt and pepper

For Serving

  • 1 cup spinach leaves
  • to taste Grated Parmesan cheese (optional) for serving

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until it becomes translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the diced carrots, celery, and bell pepper. Cook for about 5-7 minutes, stirring often until the vegetables start to soften.

Cooking

  • Mix in the zucchini, diced tomatoes, green beans, cannellini beans, and lentils.
  • Pour in the broth and season with Italian seasoning, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat to low.
  • Simmer the soup for about 30 minutes or until the lentils and vegetables are tender.
  • Stir in the spinach during the last few minutes of cooking.
  • Taste and adjust seasoning if necessary.
  • Serve hot, topped with grated Parmesan cheese if desired.
