  • 2 cups Greek yogurt Use full-fat for creaminess or low-fat as a healthier alternative.
  • 1 cup unsweetened almond milk Can use any milk of your choice.
  • 1/2 cup vanilla protein powder Experiment with different flavors if desired.
  • 1/4 cup honey or maple syrup Adjust based on sweetness preference.
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon cornstarch Optional for thickness.
  • pinch salt

Preparation

  • In a large mixing bowl, combine the Greek yogurt, almond milk, protein powder, honey or maple syrup, vanilla extract, cornstarch, and the pinch of salt.
  • Whisk all the ingredients together until smooth and well combined. Ensure there are no lumps from the protein powder.
  • If the mixture seems too thin, you can add more cornstarch, using a little water to dissolve it first if needed.
  • Pour the mixture into small serving bowls or cups.
  • Cover and refrigerate for at least 2 hours, allowing the pudding to set and chill.
  • After chilling, give the pudding a quick stir before serving.

Notes

For serving, top with fresh berries, sliced bananas, or granola for added flavor and texture. This pudding works well as a filling for parfaits. Store in an airtight container for up to five days, ideally consumed within three days.
