Instructions
Preheat your oven to 350°F (175°C) and spray a mini cupcake tin with non-stick cooking spray.
Melt the butter in a microwave-safe bowl.
In a mixing bowl, combine melted butter, sugar, cocoa powder, and salt. Whisk until smooth.
Add vanilla extract and eggs, mixing until well combined.
Gradually stir in flour and mini chocolate chips until just combined.
Fill each mini cupcake compartment about two-thirds full with batter.
Bake for 13-15 minutes, then allow to cool in the pan for a few minutes before transferring to a wire rack.
While cooling, prepare frosting by beating softened butter, confectioners' sugar, vanilla extract, and milk until fluffy.
Divide frosting into portions and add food coloring gel to each, mixing until vibrant.
Once brownie bites are cool, frost each one with colored frosting and decorate with rainbow chocolate chips or sprinkles.
Allow frosting to set for 10-15 minutes before serving.
