Ingredients
  

  • 10 tablespoons butter melted
  • cups sugar
  • 3/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 eggs
  • cups all-purpose flour
  • 1/2 cup mini chocolate chips
  • 1/2 cup butter softened for frosting
  • 2 cups confectioners' sugar sifted
  • 2 teaspoons vanilla extract for frosting
  • as needed milk for frosting consistency
  • as needed food coloring gel yellow/green, purple, orange
  • as needed rainbow chocolate chips or sprinkles for decoration

Instructions
 

  • Preheat your oven to 350°F (175°C) and spray a mini cupcake tin with non-stick cooking spray.
  • Melt the butter in a microwave-safe bowl.
  • In a mixing bowl, combine melted butter, sugar, cocoa powder, and salt. Whisk until smooth.
  • Add vanilla extract and eggs, mixing until well combined.
  • Gradually stir in flour and mini chocolate chips until just combined.
  • Fill each mini cupcake compartment about two-thirds full with batter.
  • Bake for 13-15 minutes, then allow to cool in the pan for a few minutes before transferring to a wire rack.
  • While cooling, prepare frosting by beating softened butter, confectioners' sugar, vanilla extract, and milk until fluffy.
  • Divide frosting into portions and add food coloring gel to each, mixing until vibrant.
  • Once brownie bites are cool, frost each one with colored frosting and decorate with rainbow chocolate chips or sprinkles.
  • Allow frosting to set for 10-15 minutes before serving.
