Ingredients
  

  • 3 bananas ripe bananas mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray.
  • In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In another large bowl, mash the ripe bananas with a fork or potato masher until smooth.
  • Mix in the softened butter and sugar until well combined.
  • Beat in the eggs one at a time, then add the vanilla extract and mix well.
  • Gradually add the dry ingredients to the banana mixture and stir until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean. Start checking at 55 minutes.
  • Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
