Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, sliced carrots, and sliced celery; sauté for about 5 minutes until softened.
  • Stir in minced garlic and cook for an additional minute.

Cooking

  • Pour in chicken broth and bring to a gentle boil.
  • Add shredded chicken and egg noodles.
  • Season with thyme, salt, and pepper; stir thoroughly.
  • Reduce heat and simmer for about 10 minutes, until noodles are tender.
  • Taste and adjust seasoning if necessary.
  • Ladle into bowls and garnish with chopped parsley.
