  • 1 head garlic Peeled and finely chopped
  • 1 medium onion Chopped
  • 4 cups vegetable or chicken broth Choose based on preference
  • 2 tablespoons olive oil For sautéing

  • to garnish fresh parsley Chopped

Preparation

  • Start by peeling and finely chopping the head of garlic. Next, chop the onion finely and set aside.

Sauté the Onion

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add Garlic

  • Add the finely chopped garlic to the pot and sauté for about 1 minute, being careful not to let it burn.

Incorporate the Broth

  • Pour in 4 cups of broth and bring to a boil. Once boiling, reduce the heat and simmer for approximately 20 minutes.

Season and Blend

  • Season the soup with salt and pepper to taste. Puree the soup using an immersion blender until smooth.

Final Touches

  • Taste the soup for seasoning adjustments and serve hot garnished with fresh parsley.
