Ingredients
  

Main Ingredients

  • 3 cups oat flour Make sure to use certified gluten-free oat flour if necessary.
  • 2 tbsp aluminum-free baking powder Check the expiration date for best results.
  • 12 oz plain whole milk yogurt Use all the liquid from the yogurt.
  • 1/2 tsp salt Optional for enhanced flavor.
  • rolled oats Optional topping for texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (about 175°C).
  • Grease an 8 x 4 inch loaf pan and line it with parchment paper.
  • In a large mixing bowl, combine oat flour, baking powder, and salt (if using). Whisk until uniformly mixed.
  • Add plain whole milk yogurt and fold it into the dry mixture until a dough forms.
  • Scrape the dough into the prepared loaf pan and smooth the top with a spoon.
  • Optionally, sprinkle rolled oats on top of the dough, pressing them in lightly.

Baking

  • Bake in the preheated oven for 40-45 minutes until lightly browned.
  • Let the bread cool in the pan for a few minutes then transfer to a wire rack to cool completely before slicing.

Notes

Store leftover oat bread wrapped in plastic wrap or in an airtight container for up to 3 days. For longer storage, freeze sliced bread in plastic wrap and a freezer bag.
