Ingredients
  

Cookie Ingredients

  • 1 box Devil’s Food cake mix (15.25 oz)
  • 1 stick unsalted butter, softened
  • 1 large egg, beaten

Filling Ingredients

  • 2 cups powdered sugar
  • 1 stick butter, softened
  • 1 tablespoon milk
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon vanilla extract
  • Peppermint Crunch Sprinkles for garnish (optional) Use for festive decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a large mixing bowl, combine the Devil’s Food cake mix with softened butter and mix until smooth.
  • Add the beaten egg and mix until everything is incorporated into a soft dough.
  • Scoop small portions of the cookie dough and roll into balls, flattening slightly on a baking sheet lined with parchment paper.

Baking

  • Bake the cookies in the preheated oven for about 8-10 minutes until soft but set to the touch.
  • Allow the cookies to cool on a wire rack.

Prepare Filling

  • In a separate mixing bowl, cream together the softened butter and powdered sugar until smooth.
  • Add milk, peppermint extract, and vanilla extract, and mix until creamy.

Assembly

  • Spread a generous layer of peppermint filling on the flat side of one cooled cookie and top with another cookie.
  • Optionally, sprinkle Peppermint Crunch Sprinkles on the filling before placing the second cookie.

Notes

For a stronger peppermint flavor, add more extract. Adjust the butter-to-sugar ratio for a creamier filling. Store cookies in an airtight container.
