  • 1 whole rotisserie chicken – shredded
  • 8 oz mushrooms – sliced
  • 1 medium onion – diced
  • 2 medium carrots – diced
  • 2 stalks celery – diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic – minced
  • 1 tsp thyme
  • to taste salt and pepper
  • 2 tbsp olive oil

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, diced carrots, and diced celery. Sauté for 5 to 7 minutes until softened and fragrant.
  • Introduce the minced garlic and sliced mushrooms. Cook for an additional 4 to 5 minutes until mushrooms are tender.
  • Add the shredded rotisserie chicken, chicken broth, thyme, salt, and pepper. Stir well and bring to a gentle boil.
  • Reduce the heat and let it simmer for 15 minutes.
  • Stir in the heavy cream and simmer for an additional 5 minutes.
  • Garnish with fresh herbs before serving and enjoy warm.
