Main Ingredients

  • 1 large Red Bell Pepper Washed and chopped
  • 1 piece Bird’s Eye Chili Adjust amount based on spice preference
  • 1 medium Yellow Onion Chopped
  • 2 cloves Garlic Minced
  • 1 cup Water For blending
  • 1/4 cup Vinegar For acidity
  • 1/2 teaspoon Salt To taste
  • 1/2 cup Sugar To balance flavors
  • 1 tablespoon Potato Starch or Corn Starch For thickening

Preparation

  • Wash the red bell pepper and Bird’s Eye chili to remove any dirt.
  • Slice the red bell pepper, remove seeds, and chop into small pieces.
  • Also chop the Bird’s Eye chili, adjusting according to desired spice.
  • Chop the yellow onion and mince the garlic cloves.

Cooking

  • In a medium-sized saucepan, combine the chopped red bell pepper, Bird’s Eye chili, yellow onion, minced garlic, and one cup of water.
  • Place the saucepan over medium heat and bring to a gentle simmer. Cook for about 10-15 minutes until vegetables are softened.
  • Remove the saucepan from heat and puree the mixture until smooth.
  • Return the pureed mixture to the saucepan and add vinegar, salt, and sugar. Stir to incorporate.
  • For thicker sauce, mix potato starch with a little water to create a slurry and add it to the saucepan while stirring continuously.
  • Allow the sauce to simmer for an additional 5-10 minutes, tasting and adjusting seasoning as necessary.
  • Let the sauce cool completely before transferring it to an airtight container.
