Ingredients
  

Main Ingredients

  • 14 oz firm tofu, cubed Firm tofu works best for texture.
  • 4 cups vegetable broth
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 2 green onions, chopped
  • 2 cloves garlic, minced Essential for flavor.
  • 1 inch ginger, grated Essential for flavor.
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat a splash of oil in a large pot over medium heat to coat the bottom.
  • Add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  • Pour in the vegetable broth and soy sauce. Stir gently and bring to a boil.

Cooking

  • Once boiling, add the sliced carrots and mushrooms. Boil for a few minutes.
  • Reduce heat to a simmer and add cubed tofu, broccoli florets, and chopped green onions, simmer for 5-7 minutes.
  • Season with salt and pepper as desired.
  • Serve hot in bowls, optionally garnish with extra green onions or sesame oil.
