Honey BBQ Chicken Rice

Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken thighs Can substitute with chicken breasts
  • 1 cup long-grain rice Other rice types can be used
  • 2 cups chicken broth For extra flavor
  • 1/2 cup BBQ sauce Choose your favorite brand
  • 1/4 cup honey For sweetness
  • 1 tsp garlic powder Adds flavor
  • 1 tsp onion powder Adds flavor
  • 1/2 tsp smoked paprika
  • to taste Salt and pepper
  • 1 cup mixed vegetables Optional for additional nutrition
  • to taste Chopped green onions For garnish

Instructions
 

Preparation

  • Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat a skillet over medium-high heat and sear the chicken for 3–4 minutes on each side.
  • Remove the chicken from the skillet and set aside.
  • Mix BBQ sauce and honey in a bowl.

Cooking

  • In the same skillet, toast the uncooked rice for 1–2 minutes.
  • Pour in the chicken broth and add half of the BBQ-honey mixture.
  • Return chicken to the skillet and drizzle the remaining BBQ mixture over it.
  • Cover and simmer for 15 minutes.
  • Add mixed vegetables (if using) and cook for an additional 5 minutes.

Finishing Touches

  • Let the dish rest covered for 5 minutes.
  • Garnish with chopped green onions before serving.

Notes

For added flavor, marinate the chicken in the BBQ-honey sauce beforehand. This dish can be stored in the refrigerator for up to 3 days or frozen for longer. Add a splash of chicken broth or water while reheating to maintain moisture.
