  • 1 pound chicken thighs, boneless and skinless Juicy and tender cut of chicken.
  • 2 cups cooked rice (white or brown) Base of the dish.

Marinade Ingredients

  • 1/2 cup honey Adds sweetness.
  • 1/2 cup barbecue sauce Choose your favorite flavor.
  • 2 tablespoons soy sauce Savory depth.
  • 1 tablespoon apple cider vinegar For acidity.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon ground ginger Adds warmth.
  • Salt and pepper to taste For seasoning.

Garnish

  • 1/2 cup green onions, sliced For fresh garnish.

Optional

  • steamed broccoli or mixed vegetables For added nutrition.

Instructions
 

Preparation

  • In a medium bowl, whisk together honey, barbecue sauce, soy sauce, apple cider vinegar, minced garlic, ground ginger, salt, and pepper.
  • Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over the chicken, ensuring each piece is well-coated. Seal or cover and refrigerate for at least 30 minutes (or up to 8 hours for deeper flavor).

Cooking

  • Preheat your oven to 375°F (190°C). If grilling, preheat your grill according to your manufacturer's instructions.
  • Remove the chicken from the marinade, reserving the excess marinade. If baking, place the chicken in a baking dish and brush with olive oil. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). If grilling, cook the chicken for about 6-7 minutes on each side or until fully cooked.
  • In a small saucepan, bring the reserved marinade to a boil, then reduce to a simmer for 5-10 minutes until it thickens slightly.
  • Once the chicken is ready, let it rest for a few minutes before slicing it into strips.

Serving

  • Place a generous scoop of rice on each plate, top with sliced chicken, and drizzle the thickened marinade over the top. Garnish with sliced green onions.
  • Optionally, serve with steamed broccoli or mixed vegetables for added nutrition.

Notes
