Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 cup honey BBQ sauce choose good-quality for best flavor
  • 1 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • Salt and pepper to taste

For the Potatoes

  • 1.5 lbs baby gold potatoes, halved or quartered
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 0.75 cup heavy cream can substitute with low-fat cream
  • 0.5 cup grated parmesan cheese experiment with other cheeses if desired
  • 0.5 teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Pat the chicken dry, and sprinkle it with garlic powder, salt, and pepper.
  • Heat olive oil in a skillet over medium heat.
  • Sear each side of the chicken for about 3-4 minutes, until golden brown.

Cooking Chicken

  • Reduce the heat and pour in the honey BBQ sauce.
  • Allow the chicken to simmer in the sauce for 6-8 minutes until cooked through.

Cooking Potatoes

  • In the same skillet, melt unsalted butter and add the halved or quartered potatoes.
  • Cook the potatoes until golden brown, about 10 minutes, stirring occasionally.
  • Add minced garlic and onion powder, cooking for another 2 minutes until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer.
  • After a few minutes, stir in the grated parmesan cheese, seasoning with salt and black pepper to taste.
  • Cook until the potatoes are tender, approximately 8-10 minutes.

Final Assembly

  • Return the cooked chicken to the skillet, spooning the sauce over it.
  • Heat together for an additional 2-3 minutes.
  • Garnish with fresh parsley if desired before serving.
