  • 4 pieces boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed

For the Marinade

  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For Garnish

  • 1 tablespoon fresh parsley, chopped for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix the honey, minced garlic, soy sauce, vegetable oil, ground ginger, salt, and black pepper to create the marinade.
  • Add the chicken breasts to the bowl and ensure they are well-coated with the marinade. Let it sit for at least 15 minutes.
  • While marinating, prepare the sweet potatoes by placing the cubed pieces in a separate bowl. Drizzle with a little olive oil and sprinkle with salt and pepper. Toss to coat evenly.

Baking

  • In a large baking dish, arrange the marinated chicken breasts and scatter the sweet potatoes around them.
  • Pour any remaining marinade over the chicken and sweet potatoes.
  • Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  • For the last 5 minutes, broil the dish for a nice golden finish, keeping an eye on it to avoid burning.

Serving

  • Remove from the oven and garnish with chopped parsley before serving.
