Preparation

  • In a mixing bowl, combine the honey, minced garlic, soy sauce, olive oil, salt, and pepper. Stir thoroughly until well blended.
  • Pat the chicken thighs dry with a paper towel and season lightly with salt and pepper.
  • Place the seasoned chicken thighs in the crock pot and pour the honey garlic mixture over them, ensuring even coating.

Cooking

  • Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is very tender.
  • For a thicker sauce, remove the chicken and simmer the remaining sauce in a saucepan until it reduces.

Serving

  • Serve the chicken thighs over rice or with vegetables, drizzling remaining sauce on top.
