  • 4 medium cucumbers, peeled and thinly sliced Fresh and firm cucumbers recommended.
  • 1/4 cup red onion, thinly sliced Soak in cold water if the flavor is too strong.
  • 1/4 cup honey Adjust sweetness to taste.
  • 1/4 cup fresh lime juice Freshly squeezed is best.
  • 1/4 cup fresh cilantro, chopped Can be substituted with mint.
  • to taste Salt and pepper

Preparation

  • Peel the cucumbers if desired and slice them thinly using a sharp knife or a mandoline.
  • Slice the red onion very thinly and soak in cold water for 10 minutes if preferred.
  • In a large bowl, combine the sliced cucumbers, red onion, and chopped cilantro, tossing gently to mix.
  • In a small bowl, whisk together the honey, fresh lime juice, salt, and pepper until well combined.
  • Pour the honey-lime dressing over the cucumber mixture and toss gently to coat.
  • Let the salad sit for 10-15 minutes to allow the flavors to meld before serving.
  • Serve immediately or chill in the refrigerator until ready to serve.

Notes

For variations, consider adding bell peppers, cherry tomatoes, or avocado. This salad is best served fresh. Store leftovers in an airtight container without dressing.
