Instructions
Pour warm water into the mixer bowl, add honey and yeast, stir gently and let sit 5-10 minutes until foamy.
Add canola oil, all-purpose flour, 1 cup whole wheat flour, and sea salt. Mix on low speed, then increase to medium-high until combined.
Gradually add remaining whole wheat flour 1/4 cup at a time, mixing well after each addition until dough forms a slightly tacky ball.
Transfer dough to a floured surface and knead 8-10 minutes until elastic and smooth.
Place dough in an oiled bowl, cover with damp towel, and let rise in a warm spot until doubled, about 1-2 hours.
Gently deflate dough, grease a 9x5 inch loaf pan, place dough inside, cover, and let rise until it reaches the top of the pan.
Preheat oven to 350°F. Sprinkle oatmeal on top of dough if desired.
Bake for 25-30 minutes until golden brown and hollow-sounding when tapped. Cover loosely with foil if browning too fast.
Cool in pan 10 minutes, then remove loaf onto a wire rack to cool completely or serve warm.
